
Aromatic Stir-Fried Calamari with Spinach

1 lb. PanaPesca® Fully Cleaned Calamari Rings Only
1 tbsp olive oil
1 tsp sesame oil
1 tbsp mustard seeds
4 spring onions, sliced
2 cloves garlic, de-germed and minced
1 tsp ginger root, grated
1/2 red bell pepper, de-ribbed, seeded and thinly sliced
12 snow peas, trimmed
1/3 lb. pre-washed baby spinach leaves
2 tbsp of fresh parsley, chopped
1 tsp of fresh basil, chiffonade
1 1/2 tbsp freshly squeezed lime juice
1. Heat oils in a deep frying pan or wok. Add the mustard seeds, cooking until they begin to pop. Add garlic and ginger and sauté for 15-20 seconds.
2. Add calamari rings, stir fry for 40 seconds on medium-high heat. Stir in pepper, spring onions and fry an additional minute; add the snow peas and spinach, cook until snow peas soften slightly.

3. Sprinkle lime juice over the stir fry, add basil and parsley and mix well. Serve immediately on warmed plates.
