
Braised Whole Orata or Branzino a la Duglere

2 each 1 to 1.25# Whole Fish cleaned gutted and scaled, leave head on
3 Shallots chopped
2 Tomatoes seeded & chopped
1/2C White Wine
1T Lemon Juice
2T unsalted butter
Pre heat oven 425
Rinse and dry fish with paper towels and season w/salt & pepper.
In oven able sauté pan place Shallots and Tomatoes, place fish on top.
And pour the white wine over fish.
Over medium high heat bring wine to a simmer.
Place pan in oven for 8-10 min.
Cover loosely with tin foil
When Fish is done, remove from pan to plate. Sprinkle with lemon juice
Return pan to heat, bring to a boil to thicken slightly, reduce to a simmer and whisk in butter,
Spoon sauce with tomatoes over fish and serve.
