Marinated Seafood Medley Salad



1 lb PanaPesca Seafood Medley
1/2 cup Extra Virgin Olive Oil
1/4 cup red wine vinegar
2 tbsp each: onion, bell pepper, chile pepper - coarsely chopped
Flat leaf parsley, chopped
Salt and freshly ground pepper to taste


Boil seafood medley for 5 minutes. Remove, drain and place in a medium bowl. Add remaining ingredients and marinate for several hours or overnight. Serve at room temperature on a bed of Romaine or Bibb lettuce.

Serves 4-6, appetizer portions
