Seafood Medley San Michele



10 oz PanaPesca Seafood Medley
2 oz butter
1/2 tbsp chopped garlic
4 tbsp spring onions, finely chopped
6 oz dry white wine
1 tsp lemon zest
1/2 tsp salt
14 oz can chopped tomatoes, with the juices
Tabasco sauce or chili sauce to taste
1 tbsp chopped parsley
1 tbsp chopped chives
1 tbsp chopped dill
a few sprigs of various herbs, to garnish


Melt knob of butter in a large saute pan. Sweat garlic over medium heat. Add PanaPesca seafood medley, spring onions, white wine, and lemon zest. Cover and simmer gently for three minutes. Remove lid and add tomatoes, Tabasco sauce and herbs. Simmer for two more minutes. Remove from heat and stir in remaining butter. Serve immediately in warm bowls, garnished with a few sprigs of fresh herbs.
